This is Machabon, your host. When I visited Ena in Gifu Prefecture, 
I happened to come across some spring mountain vegetables🌱
 I picked a few and made them into tempura. They have a slightly bitter taste, with a hint of sweetness in the aftertaste. 
Whenever I find them in the mountains,
 I think to myself, “Ah, spring has arrived again this year.”

I had "Tamase" for the first time in a while. Did you know this is actually a local dish that originated in Nagoya? 👀 It’s shrimp crackers sandwiched with sauce and a fried egg— a simple yet addictive flavor. It was created in the Showa era at local candy shops, and you can still find it at festival food stalls today. 🏮 When you take a crispy bite, the egg oozes out.
